INSTALL water resistant drywall (about $9 for a 4 x 8-ft. sheet at home centers) where you removed the tile and drywall. Do not install a vapor barrier with this material. Also, you shouldn't have to tape any joints as long as the new panels will overlap the outer joints (where new drywall meets old drywall) by at least 1 in.
